MARIASY TOKAJI ASZÚ 5 Puttonyos 2015

MARIASY Aszú is rich, elegant and has an excellent acid-sugar balance. This is due to the loess soil of the Tokaji Máriás vineyard, the unique microclimate and the long history of Tokaji aszú making.

In the production of MÁRIASY noble Aszú wine, 5 puttony of aszú grapes are added to 1 gönci barrel, or 136 litres of must made from high-quality Furmint and Yellow Muscatel grapes in fermentation, which means the addition of 125 kilos of hand-picked aszú grapes per grain. The mixture of must and aszú grains is soaked in the safety of the cold autumn nights, when the aszú grains absorb the must, swell, soften and are easy to press. The sweet, nectar-like aszú is fermented slowly in wooden barrels, often until Christmas. During the cold, frosty months of January, our new aszú is still cloudy and yellowish-brown in colour, but in the following months of barrel ageing we are delighted by an increasingly clear aszú wine with more delicate aromas, and it is worth cultivating the vineyard! The aszú wines are aged in 136 litre Gönczi wooden barrels for 18-24 months. Our barrels are a tribute to the oak wood of the Zemplén hills bordering the wine region and the knowledge of the local cooperage. After bottling, our aszú wines are refined in bottle for years, giving these wines the opportunity to start their aszú evolution journey of up to several decades.
